What is supreme?

SUPREME is a research project conducted by the University of Turin. Our project stems from the NODES - Nord Ovest Digitale e Sostenibile ecosystem funded by the Ministry of University and Research (MUR) under the National Recovery and Resilience Plan (PNRR). Our research focuses on using fungal strains to create new food products from agricultural byproducts.

Today, 80% of global agricultural land is used for livestock farming, making it one of the most impactful sectors on the ecosystem. To continue to provide protein sources without further burdening the environment, several alternatives to meat and its derivatives have been proposed, including fungal proteins or mycoproteins (MPs).
